Gypsum (Calcium Sulphate dihydrate) is a common chemical used to harden brewing water. A small amount added to your liquor can aid clean hop bitterness in your favourite IPA or Pilsner recipe. However, you will need to have access to information regarding the mineral/PH character of your brewing water to know how much Gypsum to add.
